Growing up, our summers at home usually involved a fridge stacked with apple pies. After a hearty lunch or dinner we could always count on a slice for dessert and my mom would have two. Now that I’m older and a little more health-conscious I realized that this indulgence rich with sugar and sometimes shortening is horrible for my parents who are watching their sugar, cholesterol and blood pressure. In an effort to find an almost guilt-free treat I put together this Better For You Parfait Pie Recipe.
This Better For You Parfait Pie Recipe pie uses greek yogurt and 3 different types of fruit to make a patriotic and delicious dessert. The recipe is the perfect ending to any outdoor gathering. Here’s what you’ll need:
Better For You Parfait Pie Recipe
1 pre-made shortbread pie crust
2 cups organic greek yogurt
1/4 cup fresh blueberries, blackberries, strawberries, and raspberries (pick 3)
3 tbsps honey
2 tbsp powdered sugar to dust (optional)
Wash and dry your fruits and set aside. In a bowl combine 2 cups organic greek yogurt and 3 tablespoons of honey using a fork or whisk. Make sure the honey is thoroughly mixed in. Slice strawberries thinly and keep other fruits like raspberries or blueberries whole. Mix half of the fruits into the yogurt mixture and slowly pour into pie tin. Spread mixture to create an even layer. We really love blueberries and they’re so healthy that you may want to add more!
Use your leftover fruits to decorate your pie, feel free to get as creative as you like and refrigerate for 30 minutes. If you would like a consistency more like ice cream leave it in the freezer for 30 minutes instead!
