I was still feeling under the weather this weekend and guilty about not helping chaperone a Girl Scout field trip when I devised this simple twist on classic brownies to lift my (and the girls’) mood. Brownie Bites are an easy to make, no fuss and portable sweet treat perfect for field trips and packing in lunch boxes. All you really need is a mini-muffin tin and a box of brownie mix. (I said it was simple!)
The Girl Scouts devoured them and I am sure your family will too.

Brownie Bites Recipe
Makes 24 brownie bites.
Ingredients
1 Box of Store-Bought Brownie Mix
Non-Stick Cooking Spray
1 gallon sized Storage Bag (optional)
1 Mini-Muffin Tin
Directions
Spray the mini-muffin tin with non-stick cooking spray to keep the brownies from sticking. Prepare the brownie mix according to the directions. Scoop the mixture into the storage bag. Twist the top of the open bag and cut one corner to make a tip. Pipe the mixture into each muffin cup filling them about 3/4 of the way full. When all cups are filled, place in the oven. These brownies will cook faster because of the shape. Brownies Bites are done when a knife inserted in the center comes out dry.
When completely cool, loosen each Brownie Bite by going around the edges with a knife.
