These Gluten Free Zucchini Muffins are no exception. Aside from sneaking in vegetables Chef Ronaldo added 8oz. of Whole Milk to boost the protein.

World's Best "Gluten Free" Zucchini Muffins
Preparation Time: 25 Times
Cook Time: 25 Minutes
- 3 Cups Shredded Zucchini
- 3 Beaten Eggs
- 8 Ounces of Whole Milk
- 1 Teaspoon Vanilla
- ½ Cup of Olive Oil
- ¾ Teaspoon Baking Soda
- ¾ Teaspoon Baking Powder
- 1 Cup Coconut Palm Sugar
- 3 Cups Gluten Free Flour
- 1 Teaspoon Salt
Preheat your oven to 375 degrees.
In a large mixing bowl mix the zucchini, eggs, milk, vanilla and olive oil then gently stir to combine the ingredients.
To the same bowl add the baking soda, baking powder, coconut palm sugar, flour and salt.
Gently combine all the ingredients together before transferring the mixture to a greased muffin pan, ensuring you divide the mixture evenly and do not overfill the pan.
Place the pan in your preheated oven and bake for 20-25minutes. Test with a toothpick to make sure the center of the muffin is done.
Remove the pan from the oven and let the muffins completely cool before enjoying with a cold glass of milk.
